🍲 Cooking and Recipes — Kochen und Rezepte

Buy ingredients at the market, ask for and follow a recipe, cook together, bake, taste and correct a dish, and cook for guests. The grammar this time is the language of instructions: the three ways German gives directions (the infinitive, the imperative and man / the passive), quantities without "of", lassen + infinitive, and the time words bevor, während, bis.

💬 Six Conversations — Gespräche

Read each one aloud, then check the English. Notice that people who cook together use du and short commands, while a stall holder and a customer use Sie.

① At the Market — Auf dem Wochenmarkt

A: Guten Morgen! Was darf es sein? Good morning! What can I get you?
B: Ein Kilo Kartoffeln, bitte. Sind die festkochend? A kilo of potatoes, please. Are they firm-cooking?
A: Die hier ja. Für eine Suppe nehmen Sie besser die mehligkochenden dort. These ones are. For a soup, you'd better take the floury ones over there.
B: Gut, dann ein Kilo von den mehligkochenden. Und ein Bund Petersilie. Good, then a kilo of the floury ones. And a bunch of parsley.
A: Darf es sonst noch etwas sein? Anything else?
B: Ja, zwei Zwiebeln und eine Knoblauchzehe, bitte. Was macht das zusammen? Yes, two onions and a clove of garlic, please. What does that come to?
A: Vier Euro dreißig. Four euros thirty.

② Asking for a Recipe — Kannst du mir das Rezept geben?

A: Die Suppe war so lecker! Kannst du mir das Rezept geben? The soup was so delicious! Can you give me the recipe?
B: Klar. Man braucht Kartoffeln, Karotten, eine Zwiebel und Brühe. Sure. You need potatoes, carrots, an onion and stock.
A: Wie lange muss man alles kochen? How long do you have to cook everything?
B: Ungefähr zwanzig Minuten, bis das Gemüse weich ist. Dann püriert man alles. About twenty minutes, until the vegetables are soft. Then you blend everything.
A: Und welche Gewürze nimmst du? And which spices do you use?
B: Nur Salz und Pfeffer. Und zum Schluss frische Petersilie. Just salt and pepper. And fresh parsley at the end.
A: Schickst du mir das Rezept per Nachricht? Will you send me the recipe in a message?
B: Mach ich heute Abend. Will do this evening.

③ Cooking Together — Schneid bitte die Zwiebeln

A: Schneid bitte die Zwiebeln, ich schäle die Karotten. Please cut the onions, I'll peel the carrots.
B: Wie klein soll ich sie schneiden? How small should I cut them?
A: Ganz klein, in Würfel. Und gib dann etwas Öl in den Topf. Very small, in cubes. And then put some oil in the pot.
B: Wie heiß soll der Herd sein? How hot should the hob be?
A: Mittlere Hitze. Lass das Öl nicht zu heiß werden, sonst verbrennt die Zwiebel. Medium heat. Don't let the oil get too hot, or the onion will burn.
B: Okay. Soll ich die Zwiebeln gleich anbraten? Okay. Shall I fry the onions straight away?
A: Ja, bis sie glasig sind. Yes, until they're translucent.

④ Baking — Der Teig muss ruhen

A: Der Teig muss noch eine Stunde ruhen. The dough still has to rest for an hour.
B: Heizt du den Ofen schon vor? Are you preheating the oven already?
A: Ja, auf hundertachtzig Grad Umluft. Bevor wir den Kuchen hineinstellen, müssen wir die Form einfetten. Yes, to 180 degrees fan oven. Before we put the cake in, we have to grease the tin.
B: Hast du Backpapier? Have you got baking paper?
A: Im Schrank links. Wie lange muss er backen? In the cupboard on the left. How long does it have to bake?
B: Etwa vierzig Minuten. Mach die Ofentür nicht zu früh auf. About forty minutes. Don't open the oven door too early.

⑤ Tasting — Es fehlt noch Salz

A: Probier mal. Wie schmeckt die Soße? Have a taste. How does the sauce taste?
B: Ein bisschen fade. Es fehlt Salz. A bit bland. It needs salt.
A: Ich nehme noch eine Prise. Und etwas Pfeffer? I'll add a pinch more. And some pepper?
B: Ja, aber nicht zu viel. Während die Nudeln kochen, mache ich den Salat. Yes, but not too much. While the pasta cooks, I'll make the salad.
A: Gut. Pass auf, dass nichts anbrennt! Good. Make sure nothing burns!
B: Keine Sorge, ich rühre die Soße regelmäßig. Don't worry, I'm stirring the sauce regularly.

⑥ Cooking for Guests — Wie viel Reis brauche ich?

A: Ich koche morgen für sechs Personen. Wie viel Reis brauche ich? I'm cooking for six people tomorrow. How much rice do I need?
B: Rechne etwa achtzig Gramm pro Person, also ungefähr ein Pfund. Count about eighty grams per person, so roughly a pound (500 g) in all.
A: Und wie viel Fleisch? And how much meat?
B: Etwa hundertfünfzig Gramm pro Person. Du kannst es beim Metzger kaufen. About a hundred and fifty grams per person. You can buy it at the butcher's.
A: Und als Nachtisch? And for dessert?
B: Ein Apfelstrudel geht immer. Lass ihn vor dem Servieren kurz abkühlen. An apple strudel always works. Let it cool briefly before serving.

Three verbs — drei Verben

Rühren ("to stir") is regular. Braten ("to fry, roast") has an umlaut in du and er and doesn't add another -e- (du brätst, er brät). Abschmecken ("to season to taste") is separable and regular.

🧩 The Language of Instructions — Anweisungen

A German recipe can give the same instruction in three different forms, and you'll meet all of them. Learn to read all three, and to speak in the second and third.

The Infinitive as an Instruction In a printed recipe, the object comes first and the infinitive comes last: Das Wasser zum Kochen bringen. Das Gemüse hinzufügen. Alles gut verrühren. A separable verb stays in one piece: aufkochen, anbraten, abschmecken. If you want to write a recipe for a friend, switch to the imperative (Bring das Wasser zum Kochen), where the prefix goes to the end (Brat die Zwiebeln an).

⚖️ Quantities — Mengenangaben

German doesn't use a word for "of" after a measure. You simply put the measure and then the thing: ein Kilo Kartoffeln ("a kilo of potatoes"), zwei Esslöffel Zucker ("two tablespoons of sugar"), eine Tasse Tee ("a cup of tea").

Singular or Plural After a Number? Masculine and neuter measure words stay in the singular after a number (zwei Kilo, drei Glas, vier Stück, zehn Gramm). Feminine measure words take the plural (zwei Tassen, drei Dosen, zwei Prisen, vier Scheiben). The food that follows is just named, without a case ending to worry about: drei Scheiben Brot. For a general amount, use etwas (some), ein bisschen (a little), ein paar (a few), zu viel / zu wenig (too much / too little), genug (enough) and pro Person (per person).

🔁 lassen — "Let" and "Leave"

In recipes, lassen + infinitive means "to let something happen" or "to leave it to …". The infinitive goes to the end, as with a modal verb.

The imperative of lassen is Lass (du), Lasst (ihr) and Lassen Sie (Sie). You'll also see Lass uns … ("Let's …") from Course 3, Chapter 9.

Same Rule, More Words Bevor, während, bis and sobald work exactly like weil, wenn and obwohl: the conjugated verb goes to the end, and when the clause comes first, the main verb follows the comma (Während die Nudeln kochen, mache ich den Salat). The first group (zuerst, dann, danach) are adverbs, so the verb comes immediately after them. Keep both patterns in mind with the "word-order map" in Course 3, Chapter 12.

📖 Reading — Lesen

Here is a real-style recipe. Notice the infinitives in the method, and the quantities in the list. Read it once, then try the questions.

Kartoffelsuppe (für 4 Personen)

Zutaten: 800 g mehligkochende Kartoffeln, 2 Karotten, 1 Zwiebel, 1 Knoblauchzehe, 1 Liter Gemüsebrühe, 2 EL Öl, 1 TL Salz, Pfeffer, 1 Bund Petersilie

Zubereitung:
1. Die Kartoffeln und die Karotten schälen und in Würfel schneiden.
2. Zwiebel und Knoblauch hacken und im Öl in einem großen Topf glasig anbraten.
3. Kartoffeln und Karotten hinzufügen, kurz mitbraten und mit der Brühe aufgießen.
4. Alles etwa zwanzig Minuten kochen lassen, bis das Gemüse weich ist.

Real German Tip — German Kitchen Measures German recipes use the metric system: grams, litres and degrees Celsius, not cups or ounces, so a kitchen scale (die Küchenwaage) is very useful. One Pfund is 500 grams, and you'll hear it at markets and butchers. Oven instructions usually say Ober- und Unterhitze (top and bottom heat) or Umluft (fan oven), and fan temperatures are usually set a little lower, so check which one a recipe means.
Real German Tip — Guten Appetit and Mahlzeit Before eating, people say Guten Appetit!, and the other person answers Danke, gleichfalls! ("thanks, the same to you"). In many workplaces around lunchtime, colleagues greet each other with Mahlzeit! (literally "mealtime"), which works as a hello at lunch. At a Wochenmarkt (weekly market) you may sample before you buy: Darf ich probieren?
