Chapter 6's dough can only take you so far — the final step is heat, and this is where a home kitchen is genuinely, physically at a disadvantage against a real pizzeria. None of that means a home-baked pizza can't be excellent — it just means the compensations in this chapter aren't optional extras, they're what closes most of the gap.
Why Home Ovens Can't Match a Real Pizza Oven

That temperature gap is the whole story — a wood-fired oven cooks a pizza so fast that the crust chars and puffs dramatically before the toppings have time to overcook, while a home oven's much lower ceiling forces a far longer bake, giving the crust more time to dry out before it ever gets close to that same char.
Compensating: A Stone or Steel, Preheated Properly
A pizza stone or steel (Chapter 1's own equipment list) is the single biggest lever you have — it's a thick slab of thermal mass that stores heat and transfers it directly into the base of the pizza the instant it touches down, roughly mimicking a real pizza oven's superheated floor.
A steel conducts heat faster and more efficiently than a stone, which generally makes it the more effective of the two for a home oven specifically — it transfers its stored heat into the dough's base more aggressively in the short time available, closing more of the gap against a wood-fired oven's own intensity.
Launching the Pizza
- Dust your peel with semolina Use a pizza peel dusted generously with Chapter 1's semolina flour, not more 00 flour — the coarser grain acts like tiny ball bearings, letting the dough slide off cleanly rather than sticking.
- Build the pizza on the peel, then move fast Assemble your stretched dough and toppings directly on the dusted peel, and don't let it sit too long before launching — the longer it sits, the more moisture soaks through and the more likely it is to stick.
- Launch with one confident, quick motion Line the front edge of the pizza up with the far edge of the stone or steel, then give the peel a short, sharp forward jerk followed by a quick backward pull, letting the pizza slide off onto the hot surface in one smooth motion.
Judging Doneness
Watch for a deeply golden, blistered crust with real dark leopard-spotting in places (a sign the stone/steel and broiler are doing their job), cheese that's fully melted and just starting to brown in spots, and — if you can safely check — a bottom crust with good, even char rather than a pale, soft underside.
