KITCHEN PRACTICE 1 — The Overcrowded Pan Experiment ==================================================================== TASK Sauté the same amount of sliced mushrooms or diced onion two ways: once spread in a single layer with space between pieces, once piled into the pan all at once. Compare colour, texture, and taste side by side. WALKTHROUGH Step 1 — Prep identically. Slice or dice enough of your vegetable for two separate batches, cut the same way, same size, so the comparison is fair. Step 2 — Batch one: properly spaced. Heat a splash of oil in your skillet over medium-high until it shimmers. Add roughly half the vegetable in a single layer, leaving visible space between pieces — don't crowd them. Let them sit without stirring for a minute or two before tossing, so real contact time with the hot pan surface happens. Step 3 — Cook until genuinely browned. Continue cooking, stirring occasionally, until you see real golden- brown colour on the pieces — this is Chapter 4's own Maillard reaction in action. Remove and set aside. Step 4 — Batch two: overcrowded. Reheat the pan, add fresh oil, and this time pile in the full other half all at once, deliberately crowding the pan. Step 5 — Watch what actually happens. Rather than sizzling and browning, notice the pan quickly filling with released liquid, and the vegetables looking pale, wet, and limp rather than browned — they're steaming in their own released moisture instead of searing. Step 6 — Taste both side by side. The spaced batch should taste noticeably more savoury and complex (real Maillard flavour); the crowded batch will taste flatter and more purely "boiled vegetable," despite using an identical pan, heat, and cooking time. -------------------------------------------------------------------- WHY THIS WORKS AS A DEMONSTRATION Overcrowding a pan does two things at once: it drops the pan's average temperature below what's needed for browning, and the vegetables' own released moisture has nowhere to evaporate to, so it pools around them instead. Chapter 4's own point that "browning needs a dry surface" is exactly what this experiment makes visible and tasteable, not just theoretical.
