Taste the broth near the noodles versus broth from elsewhere in the bowl. WALKTHROUGH Step 1 — Ladle tare into the bowl as usual. Same amount as Kitchen Practice 1, for a fair comparison. Step 2 — Pour hot broth in, but don't stir yet. Let the tare sit at the bottom, mostly unmixed. Step 3 — Add the noodles immediately. Before the tare has had any real chance to combine with the broth around it. Step 4 — Wait a moment, then taste in two different spots. Take a spoonful of broth from right near where the noodles are sitting on top of the unmixed tare at the bottom, and another spoonful from a part of the bowl further from the noodles. Step 5 — Compare.
