KITCHEN PRACTICE 2 — Comparing a 24-Hour and a 72-Hour Cold Ferment ================================================== Chapter: Italian Cookery 6 — Pizza Dough & Fermentation TASK ---- Cold-ferment two dough balls from the same batch for different lengths of time — one for 24 hours, one for 72 hours — and compare how each smells, looks, and stretches once brought back to room temperature. WHAT TO DO ---------- 1. From a single batch of dough (Kitchen Practice 1), set aside two dough balls, labelled clearly (a piece of tape with a date works well). 2. Refrigerate both, covered, at the same time. 3. After 24 hours, remove the first ball and let it sit at room temperature for 1-2 hours before testing. Smell it, look at its surface for bubbles, and gently stretch a small section by hand. 4. Return the second ball to the fridge, covered, for a further 48 hours (72 hours total). 5. After 72 hours, remove the second ball, let it come to room temperature the same way, and repeat the same smell/look/stretch comparison. WHAT TO EXPECT -------------- - The 24-hour dough should smell mild, slightly yeasty, and fairly neutral — perfectly usable, but not especially complex. - The 72-hour dough should smell noticeably more developed — a deeper, slightly tangy or fermented aroma, closer to what you'd associate with a genuinely good pizzeria crust. - The 72-hour dough should also feel visibly more relaxed and extensible when you stretch it — it should give way more easily and resist springing back, compared to the 24-hour dough, which may still show a bit more elastic pull-back. - Both should still be entirely usable — the point of this exercise isn't that one is "wrong," but that the difference is real and noticeable. WHY THIS WORKS AS AN ANSWER ---------------------------- This exercise turns the chapter's own claim about fermentation time into something you can directly taste and feel, rather than take on faith. The extra 48 hours gives the yeast and enzymes in the flour much more time to break down starches and proteins into flavour compounds and to relax the gluten network — exactly the two effects the chapter describes — and comparing two balls from the identical starting batch isolates fermentation time as the only real variable.
