KITCHEN PRACTICE 2 — The Windowpane Test at 8 and 10 Minutes

TASK
----
Test your dough with the windowpane test at the 8-minute mark, and
again after a further 2 minutes of kneading if it tears the first
time. Note how the dough's feel changes between the two tests.

WHAT TO DO
----------
1. At the 8-minute mark of kneading, pause and tear off a small
   piece of dough (roughly golf-ball sized).
2. Gently stretch it outward from the centre with both hands,
   rotating as you go, trying to get it as thin as possible without
   forcing it.
3. Hold it up to a light source. Note whether it's translucent
   (light passes through, like a thin windowpane) or whether it
   tears before it gets that thin.
4. If it tears, return the test piece to the main dough, knead the
   whole batch for 2 more minutes, and repeat the test.

WHAT TO EXPECT

- At 8 minutes, many first attempts will tear before reaching true
  translucency — the piece stretches a little, then rips at a thin
  spot rather than continuing to thin out evenly.
- After 2 more minutes (10 minutes total), the same test piece
  should stretch further and thinner before tearing, or pass
  outright — you should be able to feel the dough has become more
  elastic and less resistant compared to the first test.
- A pass looks and feels genuinely different from a near-miss: the
  dough stretches smoothly and evenly, and you can see a soft glow
  of light through it rather than a patchy, uneven thinning.

WHY THIS WORKS AS AN ANSWER

The windowpane test directly measures gluten development — the
protein network that gives dough its elasticity and structure. Two
extra minutes of kneading meaningfully strengthens that network,
which is exactly why testing at two points shows a real, felt
difference rather than a negligible one. This is also why the test
matters more than a fixed kneading time: flour hydration and gluten
content vary batch to batch, so "knead for exactly 10 minutes" is a
useful estimate, but the windowpane test is the actual ground truth.
