Compare against a properly evenly-rolled round. WHAT TO DO ---------- 1. Prepare a batch of rested roti dough as usual. 2. Roll one portion into a properly even, consistent thickness all the way across, as normal. 3. Roll a second portion deliberately unevenly — press harder on one side than the other so it ends up noticeably thicker in one spot and thinner in another. 4. Cook both the same way on the tava, then attempt to puff both over an open flame (or with the cloth-press method). 5. Compare what happens to each. WHAT TO EXPECT -------------- - The evenly rolled round should puff fully and uniformly into a round balloon shape. - The unevenly rolled round is likely to puff only partially, in the thinner area, or may not puff at all — steam escaping through the thinner spot before enough pressure builds to lift the thicker part. - The unevenly rolled round may also cook unevenly on the tava itself, with the thinner section browning faster than the thicker one.
