Bring a pot of water (or an actual braising liquid, if you have one going) to a genuine bare simmer — small, occasional bubbles. 2. Check its temperature with a thermometer. It should read close to 100°C (212°F), or slightly below at a true bare simmer. 3. Separately, heat a pot of oil or fat, checking the temperature continuously with a thermometer, until it reaches exactly 90°C (195°F). 4. Hold the fat at that temperature for a minute or two, watching it closely. 5. Compare the two side by side: how much visible movement each one shows at its own correct, intended temperature. WHAT TO EXPECT -------------- - The simmering water should show real, if gentle, visible movement — small bubbles rising steadily to the surface. - The 90°C fat should show little to no visible movement at all — it should look almost still, with maybe the faintest shimmer, a genuinely different visual signature from the simmering water even though it's not dramatically cooler. - If your 90°C fat is bubbling or moving noticeably, it's worth checking your thermometer's accuracy or reducing the heat further — real confit fat genuinely shouldn't look like it's simmering. WHY THIS WORKS AS AN ANSWER ---------------------------- The roughly 10°C gap between a braise's simmer and confit's own correct temperature sounds small on paper, but it produces a genuinely different visual and physical result — this exercise makes that difference concrete rather than abstract, giving you a real reference point for judging confit's own heat by sight in future, without needing a thermometer in hand every single time.
